Originating in the heart of San Sebastián, Spain, the Basque Cheesecake first captured the world’s attention with its distinctively rustic look and deeply indulgent character. Unlike its more structured counterparts, this iconic dessert is baked without a crust, allowing the pure richness of cream cheese, eggs, and cream to take center stage. Its beautifully burnished exterior conceals a custard-like interior that is soft, jiggly, and impossibly smooth. A texture that seduces the senses and lingers long after the last bite.

At Basque Bakery, we fell in love with the philosophy behind this cake. Simplicity elevated by technique, minimalism made divine. We were fascinated by the boldness of a cheesecake that needed no adornment, just cheese, fire, and time to become unforgettable.

But we did not stop at tradition.

Our Original Basque Cheesecake is a personal reimagination of what the perfect Basque should be. More nuanced, more indulgent, more transcendent. Every element of this cake has been tuned with obsessive care. The richness is calibrated for depth, the texture perfected for creaminess, and the top baked to a golden bronze that cracks just slightly beneath your fork.

This cake was first created in honour of our co-founder Janet’s birthday by our founder Jerlyn. A moment of quiet intention, passion, and love. What began as a heartfelt gesture soon became the foundation of Basque Bakery itself. Today, it remains our most iconic creation.
